About Behind the Knife

The purpose of BehindTheKnife.com is twofold: First, to reveal the tools in a chef’s arsenal, sometimes common, sometimes not. Some that fall into the not category include bubble wrap, makeup applicators, razors, dental floss, guitar strings, as well as other informal tools: Altoids, superglue, condoms, you name it. The toolbox itself can be a standard-issue carpenter-style toolbox, a simple knife roll, or a Snap-on-Tools Hummer on wheels with a Kryptonite lock and remote alarm system.

Everyone can learn a few tricks of the trade, both professionals and laypeople. By seeing what peers are doing, it may inspire you to switch toolboxes. Or tools. Or jobs.

The second part is figuring out what a toolbox and its contents — as well as the stories behind particular tools — can reveal about the chef behind them.

And then there’s the occasional fun, cheeky part. What’s the strangest thing in your toolbox? And what is the one tool they could never pry from your cold dead hands? Which old spoon or mincer is dull and splintery, but it was your grandma’s so you’ll never give it up? Did a particular tool inspire a favorite recipe?
