Chef Profile: Gail Simmons from Top Chef
To continue our coverage of the two Cayman Island food and wine festivals I attended over the weekend of January 15th — The Cayman Cookout, and the Taste of Cayman at Camana Bay, I managed to snag an exclusive interview with Gail Simmons from Bravo’s Top Chef.
At a morning presentation where she was interviewed by the publisher of Food and Wine Magazine, Simmons spoke of her little-publicized rich culinary background, which included stints at the Institute of Culinary Education in New York and apprenticeships at Le Cirque and Vong. She also did a stint with that most cantankerous of Iron Chef judges, Jeffrey Steingarten.
Simmons pulled the curtain back to talk about what goes on behind the scenes at Top Chef, including the fact that judging sessions will often go on into the wee hours.
After the talk, she spoke with me about the tools in her life and her obvious disdain for kitchen tools that made a chef’s job too easy, i.e., the plug-in type.

An electric can opener! I realize they’re great for people with arthritis, etc. But healthy folk should use their lazy fingers and save energy!
