Where He First Fell For It: At first glance, Carns certainly doesn’t appear to fall under the category of Culinary Luddite.

However, consider his home: a tiny Greenwich Village apartment. Combine that with the mostly uncontrolled chaos of developing and testing more than a hundred recipes, and it’s no wonder that he pared (sorry!) things down to using just one knife over the course of the project.

“This knife is perfect for a small city kitchen because it does the work of several knives,” he explains. “I can fillet a piece of sockeye-salmon, cut through a chicken bone, or slice a delicate ripe tomato with this sleek, lightweight knife.”

Woe be to you if you invite Chad into your kitchen and you have the typical ubiquitous block of inferior knives sitting on the counter. “It’s almost as if they’re displayed like a trophy,” he sneers. “I can see the intrigue of buying a set of eight knives for the same price as one Global 7 1/2” Asian chef’s knife, or as a gift! How impressed your friends will be when they open up this huge block of eight knives complete with a sharpening device!”

Methinks Chad should start a twelve-step program for incurable knife trophy gatherers to promote his book. “I’m here to say, Walk away from the block of knives! Instead, walk toward the Global window and select one great 7-1/2” Asian chef’s knife.”

I admit I’d be the first member.

I’ve only had two knife blocks in my life. One was given to me by a friend when she moved to Charleston S.C.

I probably have 10 knives of which three get almost all the use.

After years of putting it off, I finally got on the wagon with a very good knife set, and the results in the kitchen are spectacular. OF coruse, it helps that my culinary skills have improved over time, but I was really surprised at how much easier and better a good knife can make things.

Four that I can remember. Got married in my 20’s and now in my 60’s so that’s one block every decade! Most of the knives were serated, of course. They’re all gone now. A friend who cooked finally set me straight. Gave me a 8” Wusthof chef’s and a 6” Shun multi-purpose and made me promise to toss the others and learn the proper use of the two he gave me. I did both and never looked back.
