Chef Profile: Guy Fieri Plays With Knives

We happily introduce a BehindTheKnife exclusive interview with Guy Fieri, host of Food Network’s Diners, Drive-ins and Dives.
Guy recently introduced his own line of knives, called the Knuckle Sandwich Series, and he generously granted us an interview about the knives in his lives.
The First Knife You Ever Used: Guy lost his knife virginity in the eighth grade, when he received his first knife as a graduation present from junior high. Once he left home, however, he lost track of the knife, though it was never far from his mind. Happily, there is a happy ending: “I was reunited with it about 15 years after I left home, it was just sitting in the knife block in my family’s cabin, so I reclaimed it,” he marvels. “Now I have over 36 knives in my kitchen and about half are Ergo Chef or Knuckle Sandwich knives.”
Why The Knuckle Sandwich Knife? Guy had been a fan of the Ergo Chef Pro-Series line long before the Knuckle Sandwich line was ever conceived. “I get a lot of knives to try out, and Ergo Chef’s line was by far one of the ones I was most impressed with. So when I thought about starting my own knife line, I knew I wanted to go with them.”
What Inspired the Knuckle Sandwich Design? “I don’t do things in a plain-Jane style,” Guy informed us. “My knife block has a predominant place in my kitchen, so if the knives are going to be out in front of everybody, I want to like them. Plus, as far as knives go, red, black and silver are my favorite colors.”
Your Desert Island Tool: “Tongs,” he states flatly. “Good quality, heavy-duty tongs. And they can’t wobble. I do anything and everything with them. Some people use spoons or spatulas, but my universal tool in the kitchen is tongs.”
Having The Right Tool vs. The Wrong One: “The right tools encourage people to cook more often and to enjoy it more when they do,” says Guy. “The experience is fortified when you can slice and dice relatively quickly because of the usefulness of the knife.”
Any Future Knuckle Sandwich Products? On the docket are a Santoku knife, a paring knife, a knife block, and a set of steak knives, which are scheduled to be released in June.
Chief Knife Wielder here: I’ve been testing out the 8-inch chef knife, and I like it. It’s a bit heavier than my Wusthof equivalent, and it has more of an angle to it going forward, but it does the job well and the way it looks, well, makes me feel like a bit of a kitchen warrior when I settle down to my chopping board.
