Though we all have a glorified vision of purist chefs who lovingly chop every onion and tenderly tear every basil leaf with their bare hands, the truth is that if you want to get everything done in a day that needs to get done, shortcuts are often necessary in a professional kitchen.

And that applies to knife sharpeners, whether you’re a chef pressed for time or a nervous home cook who feels a bit ambivalent about using an oilstone or waterstone.

My Dad used to bring home these huge bologna to feed us 8 kids, and he’d get out this wicked knife to cut them up. only time he used that knife. As a kid it might as well have been a machete it seemed so large. Terrified me. But the bologna was good.

I bought Cutco knives from some guy I went to high school with, and 10 years later, all the handles are either broken or cracked. The only knife that works well is the serrated bread knife we use.

I have an old, no-name knife that has been passed down for 3 generations. We don’t use it, as it’s a bit rusted an worn, but I hold on to it, as it is the knife my Grandpa used to butcher his hogs with. My Dad loved the knife. Every time he saw it, a twinkle would light in his eye, a smile would creep across his face, and he would joyously proclaim, “This knife has stuck a lot of hogs!”

Oh god, that’s an easy one.

I used to own (and still do) a Benchmade Model 42 Balisong (butterfly) knife. It is both a knife I feared in my past, and now love in my present.

When I first got it, I opened it up and just felt awesome to hold it in my hand. As I began practicing, I quickly learned how scary something like it could be in the hands of amateur.

A few cuts later, I managed to tame the beast and have been flipping ever since.

I worked in a restaurant many years ago, and my duties included preparing fruit garnishes for the service bar (lemon peels, orange slices, etc). The carbon steel blade reacted with the fruit, and would turn black and leave black stains on everything I sliced. I had to scour it with an abrasive cleanser every time I used it. I was low on seniority, so they gave me the worst knife in the place.

When I was 10 years old, I was at home one day with my 15-year-old sister. My mother used to buy a lot of things on sale and freeze them for future use. I took a package of frozen bologna out of the freezer, and being an impatient kid, I tried to cut a slice off while it was still frozen. The knife slipped and I almost cut off my finger. I still have the scar. I will never forget that knife, and neither will my panicked sister! It gave me a healthy respect for knives and taught me to use them safely. BTW, Wusthof knives ROCK! I already have a couple and I love them.

I found this old serrated knife in an auction box lot. It was a little rusty and it looked kind of strange. I cleaned it up and decided to try it as a bread knife. It’s the best darn bread knife I’ve ever owned.

I’ve had one “main” cooking knife throughout my college career — an 8” Cutco chef knife. It was a standout from my cheap Walmart brand knives. I still have it and it will forever remind me of those AWESOME college dishes I mustered up and those HILARIOUS i-wouldn’t-even-try-to-eat dishes!

when I was a kid, we had one of those knives with weird blades on both sides that could cut through anything. When I cut homemade bread, guaranteed I’d cut my fingers too! That knife was moved downstairs after that!

I really don’t have any truly good knives. Of course, it doesn’t help that I don’t have a good way to sharpen the knives I won, or really know how to sharpen then properly. (Is there a difference in sharpening and honing? I feel like I heard there is, but don’t have a clue as to the difference.)
